Herring & Cabbage Salad with Creamy Dill Dressing
A refreshing and crunchy salad, packed with Nordic character. Briny pickled herring provides a fantastic protein and omega-3 boost, balanced by crisp shredded cabbage and a creamy, high-protein dressing made from skyr and fresh dill. A perfect quick lunch.

In a large bowl, combine the finely shredded white and red cabbage. Sprinkle with a little salt and toss well.

Cut the drained pickled herring fillets into bite-sized pieces.

In a separate small bowl, prepare the dressing. Whisk together the skyr, chopped dill, dijon mustard, and milled flaxseed. Season with black pepper. Add a splash of water or lemon juice to reach desired consistency.

Add the herring pieces to the cabbage.

Pour the creamy dill dressing over the salad and toss everything together until the cabbage is evenly coated.
