A quick and hearty skillet meal inspired by German street food. Juicy, browned bratwurst are nestled in tangy sauerkraut, all cooked together in one pan for minimal fuss. The addition of toasted caraway seeds and chia boosts flavour and fibre.

Method

    Heat the olive oil in a large skillet over medium-high heat. Add the bratwurst and cook, turning occasionally, for 5-7 minutes until browned on all sides.

    Add the sliced onion to the pan with the sausages and continue to cook for another 5 minutes, until the onion softens.

    Stir in the caraway seeds and toast for 30 seconds until fragrant.

    Add the drained sauerkraut to the skillet, stirring to combine with the onions and nestling the sausages into it.

    Reduce the heat to medium-low, cover, and cook for 10 minutes to allow the flavours to meld and the sausages to cook through.

    Remove the lid, stir in the chia seeds and cook for another minute.

    Serve hot, straight from the skillet, with a dollop of wholegrain mustard on the side.
